About this adventure
Deep in the foothills of the Maya Mountains, the day begins with the rich, earthy scent of roasting cacao beans. At a working farm shaded by rubber and fruit trees, a Maya host walks you from pod to paste: you'll crack sun-dried cacao, roast it over an open flame, and grind it on a stone metate the same way families here have for a thousand years. The chocolate you make is warm, gritty, and unforgettable, sweetened with a little raw cane and spiced however you like it.
From there, you gather for the copal and cultural fire experience, where fragrant tree resin curls into the air in a ceremony of gratitude and welcome that the Maya have practiced for generations. Your guide shares the stories behind the smoke, the symbols, and the offerings, connecting the cacao in your hands to the living culture of the Stann Creek and Toledo districts. It is slow, intentional, and quietly moving.
Then you trade ceremony for cool, rushing water. A short forest walk brings you to a jungle waterfall where you can swim in the clear pool, stand beneath the cascade, and let the Belize bush hum around you. By the time you climb back into the van with chocolate on your fingers and copal in your memory, you'll understand why this corner of Belize feels older and richer than anywhere else.
